My Holiday Menu Day 3: All bran mini fruit cakes.

Is it just me, or did the harmattan breeze blow small today? It feels a bit cold and dry this morning, I love the feeling, been waiting to feel it since(this Lagos weather sef  #confused)  Its my favorite time of the year, I get to be free to indulge a bit, I didn't have this much fun on my birthday *winks*

The past few days, I showed you some savory dishes, today, its dessert time!!! So, I made these mini cakes. They are not as sinful as your regular cup cakes. Its really easy to make and cooks reall quick. Ok, just see the ingredients.....

All Bran flakes. Its whole grain.

Ground All bran

Prunes and cherries.

Ingredients: This will yield 18 cup cakes.
  1. 1 cup self raising flour.
  2. 1 and half cup Kellogg's All bran flakes.
  3. 1 tbsp caster sugar.
  4. 100g soft butter. (save some for greasing the pan)
  5. 2 eggs (at room temperature)
  6. 1 and half  tbsp Treacle.
  7. A pinch of salt
  8. 1 cup Prunes_chopped
  9. 1/2 cup pickled cherries_chopped
  10. 200ml pure cherry juice
  11. Juice of 1 lemon
  12. Zest of half a lemon
  13. 1 tsp ground nut meg
  14. 1 tsp ground Cinnamon
  15. 100ml skimmed milk
  16. 1 tsp of baking soda.

  1. Grind the all bran in a dry blender or spice grinder till smooth, mix with the self raising flour, salt and all other dry ingredients and set aside.
  2. Mix the lemon juice with the mix and set aside. This will act as your butter milk, the mixture will instantly become thick.
Treacle being added to the egg, sugar and butter mix. Treacle makes the cake richer in color and taste.

Mixed ready to scoop into baking pan.

How to cook:
  1. In a dry bowl, mix the butter and sugar till light and fluffy.
  2. Add the eggs and whisk the whole mixture till even. Add the treacle, cherry juice, butter milk, and lemon zest, mix well.
  3. Now start adding the dry ingredients gently and keep mixing. If its too dry after adding the entire thing, add a bit of milk or more cherry juice. 
  4. Add the Chopped fruits and mix well.
  5. With a spoon, scoop heaps into the cup cake pan and bake in a very hot oven, for 15 to 20 mins.
  6. Check with a toothpick and be sure its smooth. 
  7. Pull out the pan and allow the cakes to cool down a bit before you bring them out of the pan.
  8. Serve with low fat yogurt or low fat cream.
This is about 150 calories or less.

This topping is just low fat yoghurt.

Voila!! Yumm yumm! I think I ate 3 small cakes already.......yikees!!! 

This cake is super yummy, super moist and super delicious and healthy. I didn't feel to guilty eating this one. hehee!. Have fun and have a very merry holiday, see ya later. God bless.

  2. Keep up the good work. Just recently I started an exercise guided by some of these videos,hv been doing my regular squats with these additional ones I began. If u see hw my head aches, so I wnt to know if its a normal side effects or am sick. I love u for ur gud work.

    1. Hi Ursula. What videos exactly? How is your diet? If you are not eating well, and exercising, then that should give you a headache. Its not a normal side effect. You need to eat a nutritious meal after every workout. Thanks for the love dear. God bless.
