My Holiday Menu Day 3: All bran mini fruit cakes.

Is it just me, or did the harmattan breeze blow small today? It feels a bit cold and dry this morning, I love the feeling, been waiting to feel it since(this Lagos weather sef  #confused)  Its my favorite time of the year, I get to be free to indulge a bit, I didn't have this much fun on my birthday *winks*

The past few days, I showed you some savory dishes, today, its dessert time!!! So, I made these mini cakes. They are not as sinful as your regular cup cakes. Its really easy to make and cooks reall quick. Ok, just see the ingredients.....

All Bran flakes. Its whole grain.

Ground All bran

Prunes and cherries.

Ingredients: This will yield 18 cup cakes.
  1. 1 cup self raising flour.
  2. 1 and half cup Kellogg's All bran flakes.
  3. 1 tbsp caster sugar.
  4. 100g soft butter. (save some for greasing the pan)
  5. 2 eggs (at room temperature)
  6. 1 and half  tbsp Treacle.
  7. A pinch of salt
  8. 1 cup Prunes_chopped
  9. 1/2 cup pickled cherries_chopped
  10. 200ml pure cherry juice
  11. Juice of 1 lemon
  12. Zest of half a lemon
  13. 1 tsp ground nut meg
  14. 1 tsp ground Cinnamon
  15. 100ml skimmed milk
  16. 1 tsp of baking soda.

  1. Grind the all bran in a dry blender or spice grinder till smooth, mix with the self raising flour, salt and all other dry ingredients and set aside.
  2. Mix the lemon juice with the mix and set aside. This will act as your butter milk, the mixture will instantly become thick.
Treacle being added to the egg, sugar and butter mix. Treacle makes the cake richer in color and taste.

Mixed ready to scoop into baking pan.

How to cook:
  1. In a dry bowl, mix the butter and sugar till light and fluffy.
  2. Add the eggs and whisk the whole mixture till even. Add the treacle, cherry juice, butter milk, and lemon zest, mix well.
  3. Now start adding the dry ingredients gently and keep mixing. If its too dry after adding the entire thing, add a bit of milk or more cherry juice. 
  4. Add the Chopped fruits and mix well.
  5. With a spoon, scoop heaps into the cup cake pan and bake in a very hot oven, for 15 to 20 mins.
  6. Check with a toothpick and be sure its smooth. 
  7. Pull out the pan and allow the cakes to cool down a bit before you bring them out of the pan.
  8. Serve with low fat yogurt or low fat cream.
This is about 150 calories or less.

Voila!! Yumm yumm! I think I ate 3 small cakes already.......yikees!!! 

This cake is super yummy, super moist and super delicious and healthy. I didn't feel to guilty eating this one. hehee!. Have fun and have a very merry holiday, see ya later. God bless.

My Holiday menu, Day 2: Jerk Goat on a stick!

Do you love goat meat like me? Yum yum yummmm!!! I like goat meat anyhow its made, but most especially in pepper soup. Today though, its Kebab style. The secret to this dish is all in the marinate. Biko, marinate oooooo, if you never tried please start now.

Ingredients: Will serve 4 people.

  1. 1kg goat meat.
  2. 2 seasoning cubes.
  3. 1 medium onion_chopped
  4. 2 tsps of dried chilli pepper_ground
  5. 1 tsp of curry powder.
  6. 1 tsp of dried thyme.
  7. 1 tsp dried rosemary( very important if you are cooking goat)
  8. 1 tsp salt
  9. 1 tsp Jamaican Jerk seasoning(this is d koko)
  10. 1 garlic clove_crushed.
  11. 1 tbsp olive oil
  12. 1 tbsp Suya spice
  13. Ketchup
  14. Roughly chopped veggies.

How to cook: 
  1. Marinate the goat meat with all the spices, leave in the fridge for at least 30 minutes. You may wish to poke the meat with the tip of your kitchen knife.
  2. Cook for about 1hr till the meat is soft. If you don't need the skin, you can cut it off. I cooked mine with the bones and skin for added flavor.
  3. Slice the cooked meat and lace with a tbsp of olive oil and suya spice. Rub the meat very well, rub it well well, let the spices penetrate. Lol!
  4. Place in a very hot oven and let it grill for about 30 mins, till it gets a bit charred at the edges. 
  5. Remove and cut into little bits, then stack them on sticks as you like. If you don't have kebab sticks, use toothpicks and stack just a piece of meat and a piece of veggie, it will still look pretty. 
  6. Drizzle some ketchup on the whole thing when you're done, cover with a cling film and refrigerate. When you are ready to serve, place in the microwave for 30 seconds. Enjoy!!!

Good morning my sweets,
I woke up this morning to a mail from a dear friend, among other things, she also told me about how the year has come to an end and her prayer concerning a particular issue still hasn't been answered. I wasn't going to do this post but it dawned on me that many other people could be going through the same thing and not know how to handle the pain or disappointment.

When you peel away all the Christmas cheer, songs, food, dancing, hampers, etc there is a lot of sadness. And this to me is the true meaning of the Christmas message. We must look into others, and offer help to those that need it, the best we, clothes, love etc.

I know many people have been waiting on that job but it didnt come, some waited on that pregnancy/baby, it didnt happen, some waited on that 'Mr/Mrs right', no show. You prayed for a sweet and happy marriage, it didnt happen. All i can say is, as long as there is life, there is hope.

Psalm 27:14 "Wait on the Lord; Be of good courage, And He shall strengthen your heart; Wait, I say, on the Lord!"

Psalm 37:3-4 "Trust in the Lord and do good; Dwell in the land and feed on His faithfulness. Delight yourself also in the Lord, And He shall give you the desires of your heart."

Psalm 62:5 "My soul, wait silently for God alone, for my expectations is from Him."

Yes, the year is almost gone, but you are alive. Live, Pray. God hears and sees all, and in His own time, He will answer. It will happen at His appointed time and it will be to His glory alone. 
Wipe your tears and give thanks, be happy no matter what. That you saw the end of this year is a blessing on its own. Cheer up, it is well. 

That said, please mind who you tell your story to, anyone that hasn't been in your shoes just wouldn't understand. Pour your heart out to God. Don't let anyone make a mockery of you. Not everyone you call "friend" loves you. It is well. God bless.

My Holiday menu, Day 1: Herb Chicken pepper soup

Hi y'all
You know I am into fitness and living a healthy life? Ok, in case you didn't know, I also love food, hehehehe!! I love good food ehhh. I enjoy cooking, cooking makes me happy. When I am bored, I cook, lol. Anyways, this week is Christmas week, so I would love to share some of my recipes with you(not that they are things you never knew about, am just trying to have fun, make una no vex, lol.) I will try to make them a bit healthy for us, so that we don't feel too guilty while indulging. All week is all about food, food, food, fooood and more fooood. #operationopenbelle Woohoo!!

If you are looking for simple recipes to make for the family or add to your party menu, maybe some of what you find here will attract you. Today i'm sharing Chicken pepper soup!! This dish may not be a big deal, but nne/nna it tastes like happiness! Simple and yummy!!!!

This was where I added all the spices to marinate with.

All mixed.

Scent leaves and curry leaves.

Ingredients: Will feed 4 to 6 people

  1. 1 whole chicken: I used live chicken, they taste better, they give better flavor and aroma to the dish (and I get to use all the spare parts of the chicken, hehehe) My neighbors don hear nwii! Lol!
  2. 2 tsps pepper soup spice_ground.
  3. 3 fresh native yellow pepper_ground
  4. 2 tsps of crayfish_ground
  5. Half a hand full of Scent leave(I just cant do without this herb)
  6. Half a hand full of curry leaves_finely chopped
  7. 1/2 tsp of thyme.
  8. 1 small bay leaf.
  9. 1 small onion_chopped 
  10. 1 garlic clove_crushed and chopped
  11. Salt and seasoning cubes to taste.

How to cook:
  1. For a deep flavor, please please and please marinate your chicken for at least 30 mins. The more you marinate, the deeper the flavor and the chicken comes out really tasty. I allowed mine 5 hours. Use all the spices, salt, seasoning cubes, onion, garlic, pepper to rub the chicken, then stick it into the fridge till you are ready to cook. Do not add water.
  2. Bring out the chicken, add a cup of water and cook till the chicken is well done. Biko, me I don't eat bloody chicken, I cook my meat till well done!
  3. When its ready, add more water, about 3 cups of BOILED water and allow to simmer, then add the chopped herbs. Taste for salt and turn of the heat.
  4. Serve with boiled plantains, yam or potatoes. I had mine with some noodles for dinner. 
  5. Heat lovers, feel free to increase the amount of pepper in the dish. #sweatisgood
I cooked the noodles plain, no spice, no salt.

Friday Goodness: Tasty Veggie Moin Moin!

Good Morning Sweets!
I hope you are still prepping for the holidays? hmmmm nice!

Ok, I have made this recipe a number of times but never shared it here (I shared some of this on the food cube). For the sake of the festive season, you might want to add this to your party menu, just to jazz things up a bit....*wink

*Moin moin with a twist.


Ingredients: This will serve 6 to 7 people. 2 wraps per person. (Basically your regular Moin ingredients)

  • 2 cups of honey Beans
  • 2 medium Onions, roughly chopped
  • 200g Tatashe 
  • 2 tbsp ground Crayfish(optional)
  • 4 small native 'yellow' pepper.
  • 3 tbsp Canola oil (For a healthier meal, minimize the amount of oil you add)
  • 1 tsp of paprika (optional)
  • 1 tsp curry powder
  • 1 hand full scent leaves_chopped (this is the main ingredient that will make a difference today)
  • Salt and seasoning cubes to taste.
  • 1 medium smoked 'titus' fish_remove bones carefully.
  • 2 eggs (optional)

Cooking Method:
  1. Blend all the ingredients, except the spices, seasoning ,scent leaves and fish. Blend till very smooth and fluffy. Do not add too much water.
  2. Pour in a bowl and add the chopped scent leaves, spices and seasoning.
  3. Share into leaf wraps, (drop a small piece of fish and egg into each wrap) or plastic bowl, whichever you prefer. I prefer the leaves because it comes out tastier. 
  4. Cook for about 45 mins and turn of the heat. Allow to cool a bit before serving.
  5. This tastes a bit different from the regular thing. If you are not sure you would like it, then make a few regular(no leaves) wraps for yourself.

I ate mine with some tomato sauce that I made the day before.

What has the healthy lifestyle taught you?

Hey Sweets,
If you have never attempted living healthy by eating clean and/or exercising, you are on your own ehh! You are missing a lot. I may be wrong, but even if you attempted it for a week, you should feel your body changing, all your body juices will start flowing again. Everything starts ticking again, it will feel like someone started your ignition(choi!). That feeling is fantastic! You need to feel it for yourself. Waking up in the morning and dancing around the house. Sometimes, I run indoors from place to place, yes, that's what happens when I wake up feeling high.

My life has changed tremendously:

  1. I sleep better.
  2. I am generally a happier and positive person (no try me before o, I bite)
  3. I am more confident.
  4. I think better, my brain functions better. I focus more on one thing at a time now(believe me when i say I was a bit scattered and lacked focus)
  5. I look better. The joy I feel when I try on new clothes now.......
I know its not just me, please share your healthy living testimonies, It doesnt matter if you tried eating healthy or exercising for some days, just tell us how you felt. It will touch someone to make a change in their life, come 2015 #operationstayalive  Testimony time! God bless.

Exercise and High Blood Pressure

Hi y'all!
Sorry for the late post guys, had to go out early. Lagos traffic is not even funny.
I went to the doctor last week, just to do a bit of checkup. I checked my blood pressure and it was 100 over 60 which the doc told me was good,  he said its because I exercise regularly (meanwhile the guy keep staring at me each time I go there, he sef shock at the weight loss, lol!), that's why it has remained so. I have maintained that rate for over 6 months now. I like to check, not that I am prone to a high blood pressure, I just want to feel safe. While pregnant, my bp was always around 120 over 80. I lost my brother due to renal failure, I'm just playing it safe.

High blood pressure is a silent killer.

There are many ways one can use to reduce a high blood pressure without drugs. Regular exercise is one of them. Please take out time to workout at least 15 mins a day, you'll feel fantastic! Exercise is for everyone, not just people trying to lose weight, even kids need it.

Talk to your doctor, let him/her check you and let you know what your ideal pressure should be. Stay safe and stay happy.

Motivation Monday: Please don't hang your healthy lifestyle!

Morning Sweets,
Hope ya'll had a nice weekend?
Eheen! Where are those people that have been planning to shelf their weight loss journeys and fitness routines all because of Christmas and new year? Lol. Allow me to be your conscience today. But, Me sef need this motivation, because on some days, I feel like sleeping and eating all day long, chai! Lord help your daughter! Although, when I do go to the gym, I try to do more work and burn more calories than before.

A little motivation for you:

So, I have been getting a few mails lately, people telling me they want to rest(meaning eat like never before) and i'm beginning to get worried. Some have stopped already, as we speak (yes i want them to feel guilty) Some say its because they want to travel, some say they just want to enjoy life (not sure they were suffering before), some talk say dem just no fit!. Ok, I hear! Just be ready for unwanted weight gain. Especially, if you've planned to eat for the whole nation.

This might help:
  • Burn major calories in advance. 
  • Do not over eat whatever it is you plan to eat.
  • Keep working out and eating clean even during the hols, just allow yourself a few treats here and there. Still apply the 'everything in moderation' rule

Did you know that, if you've been eating clean and all of a sudden eat junk or sweets, it will trigger your sugar craving, and this might take you a few months to recover. I know it will be fun to indulge and have fun, (I wish it was that easy) but, you fit regret am oooo.....

I hope this hits home for all of you planning to wound ya sefs with food (make I name names?) If you are in this category, raise up your hands. Don't stop and ruin all the hard work of many months, I beg you. Keep working out, keep staying fit and healthy. What are your holiday plans? Luv ya!!

How to lose weight by counting calories.

Good morning,
This is the second part to the calorie counting post. I will make the post as easy and as short as I can. Please take some time to read and understand it fully, if you would love to use this method to lose weight or maintain. Lets just forget everything we read in that book. Lol.

To me, this method when mastered, is the fastest way to lose weight and keep it off for good. Yes, it also comes in handy when you have reached your goal weight. It may take some time to grasp, but it works.

First, you need to calculate your daily energy requirement. This will determine how much energy you need to eat to stay healthy and maintain a HEALTHY weight on a daily basis. To determine this, your age, gender and weight are taken into consideration but let me not bore you with the formula, there are many apps that can help with this.

The koko is that;
  • Women need about 2000 calories daily to maintain their body weight. So, to lose weight, deduct 500 from this (daily).
  • Men need about 2500 calories daily. To lose weight, deduct 500 from this.
The whole idea is that, when you reduce the amount of food you eat, you begin to lose weight. 

So for one to lose weight (she/he needs to create a calorie deficit), she/he has to debit 500cals from her daily 2000cals and bank it in her calorie deficit account so that by the end of the week (for you to lose 1kg in a week, you need to have burned up to 7700 calories), she would have lost 1kg. The more you deposit, the more kgs you lose. This can be done by:
  1. Cutting down on meals: Simply by reducing your total daily calorie intake from 2000 to 1500 you will see your weight drop easy. This can be done by calculating the amount to calories in each meal, like i described in that post 2 days ago, see here . You may wish to use its easier. 
  2. Exercise: If you exercise, you get to burn more calories, this is why those that workout get to lose the weight faster. Burning more calories means that your calorie deficit account increases, which is cool for weight watchers.  E.g if you debit 500 cals from your food intake and another 500 cals from your exercises, this means you have deposited 1000 calories into your calorie deficit account, instead of just 500 from reduced meals alone. The more you bank, the more you lose, lol!
Note that the more you exercise, the more calories you burn and the more you are allowed to eat because you could be burning too much and your body could start fighting the drastic loss and then hoard fat. You need to feed your muscles with healthy nourishing meals.

Your calorie deficit may come from meals alone or both meals and exercise for an added advantage.

Example: Lets say I weigh 100kg and I eat 2500 calories daily. I live a sedentary life, i.e i hardly exercise or move around. I am told by my doctor to lose some weight, here's how i will do it;
  1. I will reduce my daily meal calories from 2500 to 2000. My total deficit in a week from food = 3500
  2. I will exercise to burn at least 500 calories daily, 3 times a week. My total deficit in a week from exercise= 1500
  3. Since i now exercise, my metabolism has received a boost, I now burn more calories when at rest, from that its about 700calories daily= 4900 in a week
  4. Weekly total deficit= 9900. Remember i just need 7700 to be able to lose 1kg? (this is why you shouldn't cheat much, If you constantly cheat, it slows down your weight loss. Now i have extra 2200 calories to carry over to the next week, meaning I have just 5500 target to lose another 1kg )
  5. If i keep doing this, i should keep dropping at least 1kg weekly till i need to recalculate and modify my energy requirements.
Now, note that as you lose weight, you need to either drive down your calorie intake or increase workouts because the moment your body gets used to the thing you're doing to it, it won't allow you to lose any more weight. Its job is to keep you alive, you will enter a plateau. 

If you dont understand all the plenty story above, biko, quietly go to and log in your body measurements and start. All you need to keep doing is to log in your daily meals and update your measurements monthly or so. But the issue with this app or site is that, your weight loss will be mega slow. So still deduct 500 calories from whatever it gives you as your energy requirement if you want to speed things up (there's no harm in speeding things up if you do it the right way), that's the amount you should eat as meals daily. This is how i did it and i still do, it helps me manage my weight.
