Friday Goodness: Noodle 2 ways: Stir-fried and Steamed Plus Portioning.

This is for some ladies in the weight loss competition, they wanted to know how to keep eating their beloved noodles, while trying to lose weight. I love noodles too o, if i release my throat eh, I can eat 2 packs with 2 fried eggs and a piece of chicken Yum yum of life!! But since we are watching our weight and getting ready for Christmas, lets tighten our belt for now, then RELEASE for enjoyment when the time comes. Hehe!

This is just to show that you don't have to quit eating all the foods you love just because you want to lose weight, you can still eat them by making little tweaks here and there. For me spice is key. I use spice to make my meals tasty without even adding oil. Usually 2 packs of noodles and fried eggs will mean eating a whopping 900 calories!!   I love to explore veggies, so feel free to use whatever veggie you have at home, just follow same steps below.

I used half of everything you see here.


Onion and a Garlic clove. 

Chopped chicken thigh meat.


INGREDIENTS:
  1. 35g of noodles(1/2 pack of your regular 70g pack).
  2. 1 small chicken thigh_skinned and chopped(you may use chicken breast or turkey meat)
  3. 1 tbsp extra virgin olive oil.
  4. 1/2 cup carrots_chopped
  5. 1 cup cabbage_chopped
  6. 1/2 cup aubergines(purple egg plant)_ chopped(optional)
  7. 1/2 cup daikon_chopped
  8. 1/2 green pepper_chopped
  9. 1 small onion_chopped
  10. 1 garlic clove_crushed and chopped
  11. 1/2 cup of warm water.
  12. 1/2 cup spring onion_chopped
  13. 1 tbsp light soy sauce (light soy sauce is stronger in taste than dark soy) Optional.
  14. 1/2 tsp of Curry, thyme, rosemary, dried chili pepper, paprika.
  15. Salt to taste.






STIR-FRY METHOD: 
  1. Ditch the packed noodle spice and cook the half pack alone in water. Use a small pot. Cook till al dente, drain and set aside.
  2. In a large pan, heat your oil and throw in the onions and garlic, reduce the heat or the garlic will burn. 
  3. Throw in the herbs and spices, this will allow them to release their oils. 
  4. After about 10 seconds, throw in the chicken, add the soy sauce and stir well. Keep stirring. reduce the heat.
  5. After about 5 mins, add the chopped veggies, if you don't like your cabbage and aubergine soft, then leave them out for now.
  6. While stirring, add the water in little batches, add the cabbage and cover the pan for for 10 seconds.
  7. Uncover and add the noodles, stir well and some salt to the dish. 
  8. Adjust for salt and spice then turn off the heat. Serve hot!


This recipe is about 400 calories!

The soy sauce gave it this dark look. You may skip it and use a stock cube instead.





STEAMED VEGGIES METHOD:

  • Boil 1 egg and set aside.
  • Boil the noodles till al dente, then set aside.
  • Using the same veggies above, although i grated them this time to mimic the look of the noodles. This will deceive the eye to think its all carbs. Lol.
  • Mix your spices(not the one packed with the noodles) with the veggies before adding it to an empty pot. I dont have a double boiler so i use my pot to steam.
  • After pouring all the veggies into the pot, all it to get hot, then add like 3 tbsp of water to the pot and cover immediately. The steam will cook the veggies. Cover for only 1 minute.
  • Uncover the pot and add the noodles. Mix well and its done.
  • Garnish with slices of boiled egg.
  • No oils here. This version is about 250 calories!!

I ended up not finishing that plate. That's how filling it is.

After chewing through this, you wouldn't even remember that its half a pack of noodles you started with. Hahahaha! But wait, what version do you prefer? I love the stir-fry any day....

  1. Hmmm nice oh...kai... Dt 35g @*scratches Head* i'd manage 60g...dts half of d others pack... I'm eating ds next week :D... I prefer d steamed method... No oil,fewer calories... Tho I dunno if it'd taste as good.... But well,what is a sister to do. Btw Cheliz why did u say we shud ditch d packed spice... Dts what gives it it's amazing taste na :( Amanda

    1. The steamed version is just as tasty, but i love stirfry. The packed spice is loaded with sodium. That is salt and unhealthy seasoning. I prefer to use my natural spice and control my salt intake. This way I am sure of what I eat and I stay healthy. Thanks luv.

  2. I love noodles. But I haven't eaten noodles since I started this weight loss journey.Thanks for the recipe Cheliz. I'll try it one of these days. I think I prefer the first version. So two packs of noodles and fried eggs is about 900 calories!!!! Smh.No wonder I was overweight.

  6. What about people like me that don't eat chicken or turkey(P.s I fear birds,chicken,turkey) . How do I throw in my protein in the meal?
