Friday Goodness: Healthy Succotash.

9:36 am 11 Comments
TGIF!!
I like to call this dish "Hot corn Salad" because at the end of the day, that is what it looks and tastes like..... to me. Its really easy and tastes amazeballs!! I was craving really spicy cooked corn, and its pretty difficult getting fresh corn this time of the year. I went ahead and used canned sweet corns to make this dish.

You will love this dish, trust me! But first......

Need to know tips:

  1. Always use olive oil on reduced heat. Its a very delicate oil and burns pretty fast.
  2. For more intense flavor, crush your garlic before chopping and sear on reduced heat. It gets burnt very fast.
  3. You can use any kind of beans or a combination of beans for this dish.

From top left: Honey Beans, red mini lentils, sweet corn.

Left: Scent leaves. Right: Chopped Onions and Garlic.

Ingredients: (Serves 3 people)

  1. 1 1/2 of canned sweet corn.
  2. 1/2 cup dry honey beans.
  3. 1/2 cup dry mini red lentils
  4. 1 cup chopped Scent leaves. (or basil leaves)
  5. 1 small onion_chopped
  6. 1 garlic clove_chopped
  7. 1 tbsp extra virgin olive oil.
  8. 1 tbsp ground chili pepper.
  9. 1 tsp crayfish_ground
  10. Salt, stock cubes to taste,

P.S: Hey! Palm oil lovers, ain't no palm oil in this dish o. *side eye* (If you leave them now, they will add 1 gallon of palm oil into the mix hahahaha!)

Drained Beans and Lentils.

Seared crayfish, Onions and garlic.

All well mixed.

Cooking Method:
  1. Cook the honey beans to perfection, but not too soft. Just before its cooked, wash the lentils and add to it, this (mini) kind take about 5 mins to get cooked.
  2. Drain and rinse off the sweet corn, set aside.
  3. Heat a large pan and add the olive oil to it. Sear the onions, garlic, crayfish and pepper. This intensifies the crayfish flavor.
  4. Pour in the beans, lentils and corn. Make sure they have been well drained. Stir well.
  5. Add the scent leaves to the mix and season the food with your salt and seasoning cubes if you like. Adjust for pepper if you like it a bit more spicy like me.
  6. Now take it off the heat and serve immediately. I had mine with a piece of spicy boiled  Mackerel.

Looks like a salad right?

This is a dish that you can use to catch a babe/guy, keep a babe/guy or just make your lover happy. They don't have to know its all so healthy, hehehehe sneaky!  Enjoy and have a blessed weekend.
Happy New Month in advance.

Are you a lone ranger?

2:25 pm 10 Comments
Hey Sweets,
I saw a post like this on popsugar.com some days ago, they asked : "which do you prefer; to workout alone or with a workout buddy?"  I have always been a lone ranger, from day 1. I love to scream and shout in the comfort of my living room, run outdoors at my own pace. Even when I go to the gym, I like to stay focused and work alone. Is that weird? Am I ok sha? Lol Hmmm, I wonder is anyone out there like me? I wouldn't mind having a great workout buddy though, to spice up those boring workout days......

In my opinion, I think its great to have a workout partner or buddy that will keep you in check and help push you along when you need it. It makes the whole process more fun.

Do you prefer to workout alone or with a friend?

God bless.

What's your poison?

12:26 pm 16 Comments
Hey Sweets,
I was gisting with the babes on bbm chat, some days ago and told them that I didn't fancy cake and ice cream, they didn't believe me, anyone that knows me well can tell you. Its not about weight loss, it didn't start today. See, I grew up with a mum that baked cakes almost every day, we went to birthday parties that served cakes my mum made. So, guess I just grew not to like cake that much.  I told the ladies that I would rather collect my birthday cake money than have plenty cakes on my birthday. I cant remember the last time I craved cake. I crave ice cream only when i'm pregnant. Honestly, I can go a year without tasting ice cream, I wouldn't even miss it.  So you want to know the things I crave? Oh yes, Cheliz dey crave o, i'm not made of stone. I crave and I indulge many times. I just punish myself afterwards. Hehe!

So, weight watching out the window, if i'm asked to indulge here are some of the things I love, or things you can (try to)tempt me with:

  1. Hot Puff puff! (Yes I know i'm razz) Choooiiii!!! Aint nothing like hot puff puff laced with sugar, washed down with hot coffee for breakfast. Chieeee!! I love puff puff ooo! A few Sundays ago, after church, that's how the puff puff lady perched by the church gate, hmmm as i came out, the aroma hit me, gbosa!! I almost fell into the gutter! the only reason I didn't buy some was because I was fasting. If not eh...... na me and that puff puff!
  2. Hot French fries and Ketchup! I don't even need chicken or fried fish to go with this. Just give it to me nice and hot and crispy. This one can make me dash you my phone. Hehehe!
  3. Hot white bread! No words here. I am speechless!
  4. Chocolate chip cookies and Chivita fruit juice. I love to have this one, while watching a movie, yum yum!!
  5. Plantain chips. I can eat plantain chips any day, any time. I like those ripe crunchy ones. I always have some in fridge. I it at least 5 times a week, hahahaha!
So please tell me, whats your poison? What is it that you love to eat, diet or no diet?! Lol! Can't wait to hear.....

God bless.

The Fuel and Burn (#FNB) weight loss challenge; Results after week 2.

8:11 am 7 Comments
Good morning Sweets.
Hope your weekend was fun filled. Mine was awesome!

This is the last week of the month (October). I thank God for a good month thus far and I pray that He goes before us into the month of November (my birth month *winks*) to make everything and all our plans perfect.

We just entered the 3rd week of the #FNB weight loss challenge, and its been fun, so much fun. I'm just loving these ladies. They are not afraid to take bold steps, and try new things. Day by day, they learn new things about themselves and get to love life more. Maybe I didn't say this in the beginning, but I don't want this to be just a "slim down" journey, I want it to be a total overhaul. New way of thinking, eating and living in general. Here are the results so far:

This week's loss across board, wasn't so much, but the ladies are seeing more changes body-wise which is what I think is more important. There is time and room for improvement. I am still very excited for them. They have gotten new tips for the week, so I hope this week will show greater results on the scale.

Is anyone out there trying to lose weight before the festive season? How has it been so far? Please share your journey (so far) with us here. We would love to know....God bless.

Friday Goodness: Fried Bulgur wheat. 170 calories per serving.

10:40 am 4 Comments
Hi Sweets, TGIF right?!

Here's something you can try over the weekend for your Wife, Hubby, lovers and Kids. For those that want their family to eat healthy without necessarily informing them, this is for you. Hehehehe! *in my sneaky voice*

Check the grains aisle for this. Look well well. Same place you find packed beans and garri :)

Bulgar/Bulgur/Burghul....same thing.

This dish is a Bulgur wheat stir-fry. According to Wikipedia "Burghul is a cereal food made from the groats of several different wheat species, most often from durum wheat. It is most common in European, Middle Eastern, and Indian cuisine."

I discovered this grain a while ago, tried it with different spices and herbs, it works just like rice. Its low in calorie, and very nutritious. I have another recipe on my food blog. This, I wanted to share with you guys. You will love it!

Where to buy: In most big supermarkets, its pretty much everywhere. A bag cost like N400. Very affordable, and will last long!

After cooking, it swells to 4 times its original size.

Ingredients: This will serve 3 people.

  1. 3/4 cup dry bulgur wheat (Remember it swells, so be careful not to cook excess)
  2. 1 tbsp extra virgin olive oil
  3. 3 medium carrots_Chopped (optional)
  4. 1 medium onion_chopped
  5. 2 medium green peppers_chopped
  6. 1 cup raw green peas (frozen will do)
  7. 1 cup shrimps
  8. 1 and half cup runner beans_chopped.
  9. 1 garlic clove_crushed and chopped
  10. 1 tbsp soy sauce.
  11. dry pepper, curry powder, salt, dry ginger powder, to taste.
I wanted this dish to be green, but i had excess carrots, so why not...

Cooking Method:
  1. Cook the bulgur wheat in a medium pot with plain water, keep stiring from time to time. It takes about 5 mins to get al dente. Drain and rinse under running water.
  2. After you chop all the veggies, set aside.
  3. In a dry non stick pan, add the olive oil, and wait till it gets hot (never over heat olive oil)
  4. Pour in the onion and stir, add all the other veggies and stir, add the shrimps, top with some salt and stir.
  5. Add the soy sauce, pepper and other seasonings. (I love me some spicy food)
  6. After about 3 mins, pour in the bulgur wheat and stir. Taste for seasoning and adjust the to your taste.
  7. Once it is well seasoned, turn off the heat.
  8. Serve hot.

                                                      Looks like rice shey?

Have you tried bulgur before? How did you prepare yours?
I hope you enjoy this dish, my kids loved it too. Have fun and have a blessed weekend. God bless.

Product review: Energade Sports drink (concentrated)

8:00 am 0 Comments
Hey y'all
I bring you another product today. Its the Energade sports drink. Its an energy drink for fitness lovers. I was walking down the 'drinks/juice aisle' in Shoprite, perusing stuff as usual. Then, I discovered this drink, tucked away in a corner. Hmmm, first it was the price that caught my eyes, I screamed! "what kind of drink will cost N1100?" "What's inside biko?" So i picked it up, lo and behold it was concentrated. "Oh ok Whew! Much berra".

What is it ?:
  • Its a sports drink or energy drink as you may prefer to call it.
  • Its made in South Africa.
  • It comes in different flavors.

Per 100ML Serving, you get:

  1. Energy 139kj that's 2% of an adults guideline daily amount.
  2. Sugars 8.6g that's 10% of an adults guideline daily amount.
  3. Fat; 0.0g that's 0% of an adults guideline daily amount.
  4. Saturates; 0.0g that's 0% of an adults guideline daily amount.
  5. Salt; 0.1g that's 1% of an adults guideline daily amount.

What does it do and how does it work?:
  1. It a workout fuel.
  2. It gives you energy and refreshes you as you workout.
  3. For the concentrated version (it also has ready to drink), you have to dilute with water. The ratio shout be 1:4. That is 1 part Energade to 4 part water.
  4. "For peak performance, mix accurately." Always better mixed with ice or very cold water.
My 500ml cup

With Ice.

What I like about it:
  1. Its affordable. It costs N1100 for 1 liter and it makes 5 liters when diluted. 1 Bottle can make 9 to 10 500ml cups for me. I save N900 when compared to other energy drinks.
  2. Its really tasty and comes in different flavors.
  3. Its really low in calorie. 1 500ml mixture contains about 150 calories.
  4. It gives me energy and refreshes me while working out, without speeding up my heart rate. It doesn't affect my appetite either. I feel hungry as usual after a good workout session.
  5. My favorite flavor is the "mixed berry"

What I don't like?
  1. I wish there were more fruity flavors! Lol (greedy babe)

Have you tried this drink before and did you like it? Please let me know.

You guys need to try it, don't drink it right before bed time though, it might interfere with your sleep. Don't say I didn't warn you, when you start shining eyes....Hahaha! It is sold at Shoprite, Check the juice/drinks aisle.  Go with enough money to buy 2 bottles, you might not see it there again, you know how all these imported stuff can be. Checkout their website below.  Take care and God bless.
